Chocolate Chip Cookies

Chocolate Chip Cookies (*not healthy)

Blend Together -
4 eggs. 2tsp Vanilla. 1 1/2 C white sugar. 1 1/2 C Brown Sugar. 2C Shortening.

In a different bowl mix -
2tsp salt. 2 tsp baking soda. 4 1/2 C Flour.

Blend the two mixes together. Add as many chocolate chips as you would like & bake at 350 for 10 minutes.

You can substitute the shortening with butter. This is what we did and they tasted delicious. Also this recipe makes at least 40 cookies so unless your having a party I would half the recipe, or you could just make 40 and eat them all... The recipe says to bake them for 10 minutes. I baked them for 8-9 minutes. They last longer without getting too crunchy and they taste better when warm because they are still a tiny bit gooey!

This recipe has been in our family for quite some time. I hope you enjoy these yummy treats.

*If you make them with pure & organic products, free range eggs, raw milk butter and whole wheat flour, this will make them expentioally better for you. You still have to eat everything in moderation but I would argue that one cookie with these ingredients is not bad for you.

One of the Florence households favorite dinner meal is breakfast. While I have been trying to cook healthier, waffles and pancakes have been a no-no. So we mostly stick to eggs, 100% grass fed organic bacon and Dave's bread. While this is still an amazing breakfast, we were beginning to miss the carbs. They are just too darn good. 

One of my recently found bloggers (who I adore), blogged this awesome waffle recipe that I just had to try. The best part is that they are egg free and if you want, they can be dairy free. The only dairy that it calls for is milk. You could use any type of milk that you want. We used raw whole milk. 

                   

                   

Ingredients

2 c flour
4 t baking powder
1 T honey
5 T coconut oil
2 T water
2 c milk (of any kind)
1 t vanilla extract

Directions

Mix all of the wet ingredients together and all of the dry ingredients together separately. When you mix all of the wet ingredients together warm them up because the coconut oil will harden if you mix in cold milk or water. Enjoy while they are warm with a generous amount of powdered sugar and butter, that's my favorite!

Okay people, this has been my most favorite recipes so far from the cookbook. It is funny that I am saying that because while I was making it I was convinced I wouldn't like it. And in fact, I actually didn't care for it as just a broth. 

I ended up adding tons of vegetables, 1/2 cup of rice and some shredded chicken. Then... It was amazing. The broth has such an amazing flavor and when it is soaked into the vegetables, rice and chicken... its to die for. I had to stop myself from making it the very next day. I don't want to get tired of it. But... i'll probably make it again next week. It is such a nice feeling to have super healthy meals that are so yummy and easy to make. I am a cook in the making people!!! This will be a staple in the Florence household!

Blueberry soda

The third recipe I attempted from Nina Plancks cookbook was blueberry soda. It was so much fun and so yummy. One of the things that I have loved so far about going through this cookbook is how much I am learning. I had no idea that boiling blueberries in water would pull the flavor out of the blueberries and create a blueberry sauce. If you want it to be sweeter, then add some more sugar because it was a bit sour with the lime. But other than that it was so good and so much fun.
